Go to Settings/General/Keyboard/International Keyboards and select Emoji.

Now when any keyboard is visible, click the small globe that is to the left of the space-bar.

You can now choose from hundreds of Emoji icons for your emails, texts and Messages.

Note that on each page of icons you can scroll left and right for more.
